ZUCCHINI CHEESE CASSEROLE 
3 lbs. zucchini
1/2 c. onion, chopped
2 eggs
1 tsp. sugar
1/2 tsp. pepper
1 tsp. salt
1 1/2 c. Monterey Jack or Cheddar cheese
1/2 lb. sausage (optional)

Boil zucchini until tender and mash. Set to cool. Brown sausage and onion. Add to zucchini mixture; mix well. Beat eggs slightly; add salt, pepper, sugar and 1 cup of the cheese. Stir into zucchini mixture. Place in buttered rectangular casserole dish; put remaining cheese on top. Bake at 375 degrees for 45 to 55 minutes.
