MUFFIN CHEESE CAKES 
2 (8 oz.) pkg. cream cheese, at room temperature
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
Cupcake papers

Put a vanilla wafer in the bottom of each paper muffin cup. Combine all other ingredients to beat together. Spoon on top of cookies (2/3 full). Bake at 375 degrees for 15 minutes. Cool. Refrigerate. Top with favorite jam, jelly, pie filling or frosting.
