EGGS BUCKINGHAM 
3 tbsp. butter
2 tbsp. flour
Dash pepper
1 1/4 c. milk
1 (3 oz.) pkg. smoked beef
1 tbsp. butter
4 eggs
1 tbsp. milk
Dash salt & pepper

In 2 cup measure, melt butter. Blend in flour and seasonings. Stir in 1 1/4 cups milk. Cook 2 to 3 minutes, until thick, stirring occasionally. Stir in chopped up beef. In 9" pie plate, melt butter. In small mixing bowl, combine eggs, milk and seasonings; beat well. Pour over melted butter. Cook, covered, until eggs are slightly softer than desired for scrambled eggs, 2 1/2 to 3 minutes, stirring often. Arrange buttered toast, English muffins or rusks on plate. Spoon egg mixture over top, cover with beef sauce. Cook 1 minute to heat. (Use microwave oven.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
