COCONUT CAKE 
white cake mix, prepared as directed

Let cool in pan approximately 6 minutes then remove and cool rest of way. Put coconut into bowl. Boil 1 cup water and 1 cup sugar then pour over coconut. Drain, reserving liquid and spoon that liquid over cakes.

Icing:

1/3 c. plus 2 tbsp. water
1 1/4 c. sugar
1 tbsp. light Karo syrup
3 egg whites

Beat egg whites until fluffy. Boil first 3 ingredients until it breaks and flys away like a hair when it drains from spoon (it will really do this). Slowly add syrup mixture to egg whites, beating constantly until syrup is gone. (Do this as quickly as possible before syrup gets cooled.) Spread icing over and between cake layers. Then pat coconut on top.
