RICE SALAD 
1 pkg. chicken Rice-A-Roni
1/2 c. chopped bell pepper
3 tbsp. diced onion
2 jars marinated artichoke hearts, drained
1 sm. can sliced ripe olives, drained

Cook Rice-a-Roni according to package directions. Cool. Add remaining ingredients. Save oil from one jar of artichokes and add to 1/3 cup mayonnaise for dressing. Toss all together. Put in lettuce lined bowl. Chill. NOTE: In place of bell pepper add one small can diced green chilies.
