GERMAN POTATO SALAD 
8 boiled potatoes (peel and dice)
1 stalk celery (diced)
1 sm. onion (minced)
1 tbsp. minced parsley
2 tsp. salt and pepper
5 slices bacon, diced
2 well beaten eggs
1/2 c. sugar
1/2 c. vinegar
1/2 c. cold water
1 tbsp. flour
1/4 tsp. dry mustard
1/2 tsp. salt
1/2 tsp. pepper

Combine diced potatoes, celery, onion and parsley.

Fry bacon until crisp.

Beat eggs, sugar, spices, vinegar, water and flour together. Mix well in frying pan with bacon and grease. Mix until mixture thickens (about 10 minutes). Pour over potato mixture and toss lightly.

Garnish with hard cooked egg slices if desired.
