CALIFORNIA VEGETABLE CASSEROLE 
3 eggs
1/2 c. milk
1/2 c. Bisquick
1 tsp. salt
1/4-1/2 tsp. cayenne red pepper
1/4 tsp. pepper
3 c. chopped unpared zucchini
3 c. chopped tomatoes (3-4 med.)
2 c. shredded cheddar cheese (8 oz.)

Heat oven to 350 degrees. Beat eggs slightly; beat in milk, baking mix, salt, red pepper and pepper. Place zucchini in greased baking dish, 8 x 8 x 2 inches; sprinkle with tomatoes and cheese. Pour egg mixture over cheese mixture. Bake uncovered 45-50 minutes or until golden brown. Let stand 10 minutes before serving. 6-9 servings.
