CHEESE-TARTS 
1 lb. cream cheese
2 eggs
3/4 c. sugar
1 tsp. lemon extract
1 box vanilla wafers
1 cherry pie filling

Beat all ingredients until mixed. Use paper cups in cupcake pan. Place 1 vanilla wafer in bottom of cupcake, fill paper cup filled 3/4 of cheese mix in each. Bake 375 for 20 minutes. Cool. Fill with cherry pie filling. Makes 21 tarts.
