CHICKEN AND BROCCOLI 
1 1/2 lbs. chicken breast
1 lg. stalk broccoli, chopped
2 c. cooked rice
12 oz. shredded cheddar cheese
2 cans mushroom soup
Salt and pepper to taste

Cook chicken until tender in salted water. Drain. Cut into chunks. Chop broccoli into small pieces. Mix all ingredients together and bake at 350 degrees for 30 to 45 minutes.
