BRAN MUFFINS 
7 c. Raisin Bran Flake cereal
3 c. sugar
5 c. flour
5 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon (opt.)
4 eggs, well beaten (or Egg Beaters)
1 c. cooking oil
1 qt. buttermilk
1 c. raisins

Mix together raisin bran flakes, sugar, flour, soda, salt and cinnamon. Add well beaten eggs, oil, buttermilk and raisins. Mix well. Fill greased muffin tins 1/2 to 3/4 full and bake in 375 degree oven for 20 to 25 minutes. Refrigerate extra batter in tightly covered container up to 6 weeks, using as desired. Yield: 5 dozen.
