JEAN MUFFINS 
1 c. old-fashioned or quick cooking oats
1 1/4 c. orange juice
2 c. uncooked oat bran
2/3 c. all-purpose flour
1/2 c. nonfat dry milk
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2/3 c. packed brown sugar
1/3 c. vegetable oil
2 lg. eggs
1 tsp. vanilla

Soak oats in orange juice in large bowl 15 minutes. Heat oven to 425 degrees. Line muffin pan with paper cups. Mix oat bran, flour, milk powder, baking powder, baking soda and salt.

Stir brown sugar, oil, eggs and vanilla into soaked oat mixture until well blended. Then stir in flour mixture just until dry ingredients are moistened.

Spoon batter into lined muffin cups. Bake 20-25 minutes until lightly browned and pick inserted comes out clean.
