FISH PACKETS 
16 oz. frozen haddock or cod
1 lg. cucumber
1 med. lemon, sliced
2 oz. pimento, optional
1/2 tsp. salt
1/4 tsp. chicken bouillon
1/8 tsp. pepper
1/8 tsp. Italian seasoning

Preheat oven to 450 degrees. Cut cucumber lengthwise, remove seeds and cut halves into 1/4 inch slices.

Cut fish into 4 equal portions. Wrap each fish in foil with 1/4 of cucumber, lemon and seasonings. Place packets, seam side up in baking pan. Bake 35 minutes until fish flakes easily.

Fish packets cook well over a campfire or grill.
