HOT SHRIMP LUNCHEON SALAD 
2 tbsp. vegetable oil
4 tsp. white wine
Tarragon vinegar
1 tsp. Italian salad dressing mix
1 c. cooked shrimp
1/4 c. chopped tomato
1/4 c. chopped celery
2 green onions, chopped
1 tsp. drained capers
Shredded lettuce
1/4 c. shredded Cheddar cheese
1 tbsp. chopped parsley

1. In a screw top jar combine oil, vinegar and dressing mix; cover and shake well. 2. In a 1 quart bowl combine shrimp, tomatoes, celery, onion and capers. Dressing over shrimp mixture; toss gently. Microwave at 30% (mid- low) 3 to 4 minutes. Toss gently after 1 1/2 minutes. 3. Place lettuce on 2 plates. Spoon warm shrimp mixture over lettuce. Sprinkle with cheese and parsley. Makes 2 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
