ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
3 tsp. vanilla
2 c. grated zucchini, drained
3 c. flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
2 c. chopped nuts (optional)

Beat eggs until light and foamy. Add oil, sugar, vanilla, and grated zucchini. Mix lightly but well. Add flour, cinnamon, salt, soda and baking powder. Mix until blended. Add nuts. Pour into two loaf pans or Bundt pan, filling half full. Bake at 350 degrees 1 hour. Test for doneness, cool at once on rack.
