SUMMER SQUASH BREAD | |
3 eggs, beaten 1 c. oil 1 to 2 c. sugar 2 c. grated, unpeeled zucchini or yellow squash 3 tsp. vanilla 3 c. whole wheat flour 1 tsp. salt 1 tsp. baking soda 3 tsp. cinnamon 1/2 tsp. baking powder Beat eggs until light and foamy. Add oil, sugar, squash and vanilla. Mix lightly but well. Sift together flour, salt, soda, cinnamon and baking powder. Mix until blended. Put in two oiled 9 x 5 x 2 inch pans. Bake about one hour at 325 degrees. Optional: For herbed squash bread: use lesser amount of sugar; omit vanilla and cinnamon; and add 1 1/2 teaspoons sage, 1 teaspoon thyme, dash of celery salt and dried onion to taste. |
