VONDA'S POTATO CANDY 
2 sm. or 1 med. potato, cooked with skin on, peeled, mashed with fork
2 tsp. vanilla
1 box powdered sugar

Mix to stiff dough. Roll to 1/4 inch with more powdered sugar. Spread with crunchy or smooth peanut butter, then roll like jelly roll. Put sugar on plate first. Then cool and slice.
