EASY FETTUCCINE 
1 stick butter, cubed bring to room temperature
1 (16 oz.) Ricotta room temperature
2 tbsp. dried chives (use more to taste if chives are fresh)
1/2 to 1 c. fresh grated Parmesan cheese to taste
9 oz. fresh pasta

Mix first four ingredients; then toss with cooked pasta. Salt and pepper to taste. Serve 4.
