SPINACH, HAM & ONION QUICHE 
1 (9-inch) deep dish pie crust, unbaked
1 (10 oz.) pkg. frozen chopped spinach
1 1/2 cups diced ham
1 sm. diced onion
3 eggs
1/2 cup milk
1/2 cup heavy cream
1 1/2 cups grated Swiss cheese
1/2 tsp. salt
1/8 tsp. pepper

Preheat oven to 350°F. Set pie crust out to defrost if frozen. Defrost spinach, squeeze out all remaining liquid.

Sauté ham and onion in a large skillet until lightly browned. Drain off all liquid if any. Stir in spinach. Turn off heat, stir in eggs, milk, heavy cream and seasonings. Mix well. Pour into pie crust. Bake at 350°F for 1 1/2 hours or until knife plunged in center comes out clean. Serve hot, warm or cold.
