SPINACH PIE 
1 lb. ground turkey
1 lb. mild or hot Jimmie Dean sausage
1 onion, minced
1 pkg. frozen chopped spinach, thawed and drained
3 c. grated Mozzarella cheese
2 eggs, beaten
1 (9-inch) single pie crust

Fry ground turkey, sausage and onion until there is no pink left but do not brown. Drain well.

In a large bowl, combine meat, spinach, cheese and eggs. Mix well and spoon into pie crust. Bake at 350 degrees for 45 minutes or until firm.

This is wonderful if any is leftover for breakfast with fried eggs. Serves 6.
