POTATO PANCAKES 
2 eggs, separated
1 c. mashed potatoes
2 tsp. baking powder
1/2 c. flour
1 c. milk

Add egg yolks to the mashed potatoes and mix well. Sift the flour and baking powder together then mix with the milk until smooth. Fold in the stiffly beaten egg whites and drop spoonfuls on hot greased griddle or skillet. Finely chopped onion sprinkled on the batter before turning adds a different flavor. Also bacon chips makes a fine addition.
