RED BEET JELLY 
1 1/2 lbs. raw red beets
2 pkgs. powdered pectin
1/2 c. lemon juice
8 c sugar
1 (6 oz.) pkg. raspberry gelatin

Peel or scrub raw red beets. Cover with water and boil until tender. Drain off juice.

Bring 6 cups beet juice, lemon juice and pectin to hard boil. Add all at once sugar and gelatin. Boil 8 minutes. Skim, pour into sterilized jars and seal. Makes approximately 6 pints.
