STRAWBERRY RHUBARB GELATIN SALAD 
3 c. diced rhubarb
1/2 c. water
1 (6 oz.) pkg. strawberry flavored gelatin
1/2 to 3/4 c. sugar
1 (20 oz.) can unsweetened crushed pineapple

In a large saucepan, cook rhubarb in water until tender. Add gelatin and stir until dissolved. Stir in sugar to taste. Add pineapple and stir. Pour into a 9 x 13 inch pan and refrigerate until set. Serves 12.
