MOON CAKE 
1 c. water
1/2 c. butter
1 c. flour
4 eggs
1 sm. pkg. instant vanilla pudding
8 oz. softened cream cheese
Cool Whip
Chocolate ice cream topping
Chopped peanuts

Bring water and butter to a boil. Add flour all at once. Stir rapidly until mixture forms a ball. Remove from heat and cool. Beat in eggs, one at a time. Beat well. Spread on ungreased cookie sheet (11 x 15 inch) and bake for 30 minutes at 400 degrees. Cool well. Don't prick to test - leave as is.

Mix 2 small packages of pudding as directed on package. Beat in 8 ounce softened cream cheese. Beat well. Spread on cooled crust. Refrigerate 20-30 minutes. Top with whipped topping, drizzle with chocolate sauce and nuts.
