MEATLESS MINESTRONE SOUP 
1 good size onion, chopped
1 1/2 c. celery, chopped

Saute in 1/8 cup of oil. Add 1 cup water and simmer for 15 minutes. Add: 1 can tomato paste & 10 c. water

Then add: 1 to 2 bay leaves 1 tsp. oregano 2 tsp. basil 1/2 tsp. rosemary Salt & pepper to taste 4 c. or more of vegetables (carrots, broccoli, green beans, peas, corn, cabbage, green pepper, mushrooms)

Simmer for at least 1 hour or until vegetables are tender. 30 minutes before serving, add 1 can of beans, kidney, garbonzo, butter, etc. Also add a handful of broken spaghetti. Remove bay leaves before serving. Makes a big pot.
