ESTOFADO DE POLLO 
1 med. chicken, cut into 6 pieces
1/3 c. cooking oil
1 1/2 c. onion, chopped
1 clove garlic, crushed
Salt & pepper to taste
1 (3 oz.) can tomato paste
3/4 c. sauterne
1/4 c. raisins
1/2 c. peas
1/2 c. carrots, diced
6 yellow potatoes, boiled

In a medium pot brown chicken pieces in cooking oil, then remove. Saute onions and garlic. Add tomato paste, sauterne, salt, pepper, raisins, peas and carrots; mix well. Place chicken pieces on top, cover and simmer for 15 minutes or until meat is done. Add boiled potatoes. Serve with rice.

Serves 6.
