HASH BROWN POTATO CASSEROLE 
1 (2 lb.) pkg. frozen hash browns, thawed
1/2 c. softened butter
1 can cream of chicken soup
2 c. grated cheddar cheese
1 tsp. salt
1/4 tsp. pepper
2 cartons sour cream
1/2 c. chopped onion; optional

Mix all of the above ingredients. Place in buttered casserole. Sprinkle over top: 2 cups crushed corn flakes mixed with 1/4 cup softened butter. Bake 45 minutes at 350 degrees. Freezes well before cooking.
