PECAN WAFFLES | |
2 c. sifted all purpose flour 1 tsp. Arm & Hammer Brand or Cow Brand baking soda 1 tbsp. sugar 1/2 tsp. salt 2 eggs, separated 1/4 c. vinegar 1 3/4 c. sweetmilk 1/3 c. melted shortening 3/4 c. chopped pecans 1. Sift flour, baking soda, sugar and salt together. 2. Beat egg yolks, vinegar, and milk together. 3. Add dry ingredients, melted shortening and pecans. 4. Stir until batter is smooth. 5. Beat egg whites until stiff but not dry and fold into batter. 6. Pour batter on heated iron to about one inch of edge. 7. Bake at once. Bake 3 to 4 minutes or until waffles stop steaming. 8. Serve with butter and syrup. |
