SPAGHETTI WITH SPINACH "PESTO"
SAUCE
 
3 cloves garlic, crushed
1 tbsp. vegetable oil
2 (9 oz.) pkgs. frozen creamed spinach, thawed
1 (3 oz.) jar pignoli (pine) nuts, ground (can substitute walnuts)
1 tbsp. basil, crushed
1/2 c. grated Parmesan cheese
1 lb. spaghetti

Saute garlic in hot oil in large skillet just until tender. Add spinach, nuts, basil and cheese. Cook just until thoroughly heated, about 5 minutes. Cook and drain spaghetti. Reheat sauce; toss with spaghetti. Serves 4.
