RAISED DOUGHNUTS | |
1 yeast cake soaked in 2 cups warm milk to which you have added 2 tablespoons sugar for 5 minutes. Add 2 well beaten eggs, 1/2 cup butter, scant teaspoon salt, 1 teaspoon vanilla, or 1/2 teaspoon nutmeg and about 5 cups flour. Let rise to double. Punch down. Let rise again and stretch to 1/2 inch thick. Cut with cutter and let rise to double, then fry in hot fat or oil. Glaze or sugar. Makes 4 dozen. GLAZE: 2 c. powdered sugar 1 tsp. vanilla 1/4 c. milk |
