GREEN ENCHILADAS 
1 lb. ground beef
1 lg. onion, chopped
1/2 lb. longhorn cheese, grated
1 sm. can evaporated milk
1/2 lb. Velveeta cheese, cubed
1 can cream of chicken soup
1 sm. can chopped chilies
1 sm. jar pimiento
Doritos, lightly crushed

Cook ground beef and onion in skillet and drain. Add longhorn cheese. In a double boiler, heat evaporated milk, soup and Velveeta until the cheese melts. Add chilies and pimiento. Sprinkle a layer of Doritos in a casserole dish. Add a layer of meat mixture, then a layer of cheese. Repeat. Save a little of the meat mixture to sprinkle on top. Bake in a 350 degree oven for about 20 minutes or for however long it takes to heat through. Serves 4 to 6. Freezes well.
