MINI COCOA-CARROT CAKES | |
1 3/4 c. sugar 1 1/2 c. all purpose flour 1/3 c. cocoa powder 1 1/4 tsp. baking soda 1 tsp. ground cinnamon 1 tsp. salt 1/2 c. vegetable oil 3 eggs, slightly beaten 1 tsp. vanilla extract 4 carrots, shredded, about 2 1/2 c. 1 c. raisins Confectioners sugar for garnish Preheat oven to 350 degrees. Spray five 5 3/4 x 3 1/4 x 2 1/4 inch loaf pans with nonstick cooking spray; set aside. In large bowl, combine sugar, flour, cocoa powder, baking soda, cinnamon, and salt. In medium bowl, with electric mixer on medium speed, beat oil, eggs, vanilla, and 1/3 cup water until well blended. Fold in dry ingredients, carrots, and raisins. Evenly spoon batter into prepared pans. Bake 35 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks. Unmold and garnish. Makes 5 loaves. |
