MOTHER'S BAKED ALASKA | |
1 pkg. brownie mix 1/2 gallon ice cream, your choice - chocolate chip is good 4 egg whites 1/2 tsp. cream of tartar 2/3 c. granulated sugar Mix brownie mix according to directions and bake in one 8 or 9 inch round cake pan. Cover baking sheet or pizza pan with aluminum foil. Place cooled brownie on baking sheet. Allow ice cream to soften at room temperature. Line shallow bowl with aluminum foil. Spoon ice cream into bowl, being careful not to allow air pockets. Re-freeze until firm. Place molded ice cream on top of cooled brownie. Beat egg whites and cream of tartar until foamy. Beat in sugar, very slowly; continue beating until stiff and glossy. Completely cover cake and ice cream with meringue, sealing it to foil on sheet (the dessert can be either frozen or baked at this point). Heat oven to 500 degrees. Bake in low rack in oven 3-5 minutes or until meringue is lightly browned. Serve immediately. 12 servings. |
