4 tsp. butter, softened 1/2 c. sugar 1/2 tsp. vanilla extract 1 whole egg 1 c. self-rising flour Preheat oven to 350 degrees. In mixing bowl place butter in microwave oven to soften. Mix in sugar, vanilla, and egg. Put aside 2 teaspoons of flour and blend in 1/2 cup flour to mixture. Fold in with a spoon the last 1/2 cup of flour. Use the 2 teaspoons of flour to dust 10 inch greased baking pan. Pat down dough to form crust in bottom of pan. (If desired, pie crust or graham cracker crust may be used in baking pan). TOPPING: 2 (8 oz.) pkgs. Philadelphia cream cheese 3 oz. pkg. lemon Jello pudding and pie filling 2 eggs 1/2 c. sugar 1 c. milk In mixing bowl mix to creamy paste and pour over crust in baking pan. Bake in 350 degree oven 1 hour to 1 1/2 hours, until light brown on top. Allow to cool before cutting. |
