SCALLOPED CHICKEN 
4 c. cooked, diced chicken
1 c. chopped celery
1/2 c. minced onion
1/2 c. mayonnaise
8 slices bread, cubed
Salt & pepper to taste
3 eggs, beaten
3 c. milk
1 can cream of mushroom soup
2 c. shredded cheddar cheese

Spread 4 slices of cubed bread on bottom of 9"x13" pan. Spread over bread a mixture of chicken, mayonnaise, celery, minced onion and salt and pepper. Layer over mixture of 4 or more slices of cubed bread. Pour beaten eggs and milk over bread. Cover and refrigerate overnight. Bake for 1 hour. Add 1 can cream of mushroom soup over top, sprinkle with shredded cheddar cheese. Bake 15 minutes. Serves 8.
