BEST EVER STRAWBERRY PIE | |
9" baked pie crust 3 boxes, about 7 1/2 cups, fresh strawberries, hulled, divided in use 3 tsp. cornstarch 1 c. sugar Whipped cream for garnish Prepare pie crust and cool. Wash all berries and drain on paper towels. Arrange one-half of WELL DRAINED berries over bottom of crust. Mash the remaining one-half berries. Food processor may be used in short bursts. In medium saucepan, combine cornstarch and sugar. Add mashed berries and bring to a boil over high heat, stirring constantly. Reduce heat, continue to stir and cook until mixture is thickened. Mixture will turn a much deeper shade of red and become somewhat clear when it has thickened properly. Gently pour over arranged berries in crust. Cool. Serve with whipped cream. |
