CHICKEN LOAF 
LOAF:

1 (4 lb.) chicken, cooked, deboned
2 c. day old bread crumbs
1 c. cooked white rice
1 1/2 tsp. salt
3 c. chicken broth
4 well beaten eggs

SAUCE:

1 c. butter
1 c. mushrooms
1/4 c. flour
2 c. chicken stock
1/4 c. milk
1/8 tsp. paprika
1 tsp. parsley
Juice of 1 lemon

Mix loaf ingredients together; place in 2 loaf pans. Cook 1 hour at 350 degrees. Serve with sauce.

SAUCE: Simmer butter and mushrooms together for 5 minutes. Add flour, chicken stock, milk, paprika, parsley and lemon juice. Mix and simmer.
