TIROPITIA 
1 lb. Feta cheese
1 lb. Ricotta cheese
1/2 lb. Temptee cream cheese
4 eggs
Pinch of nutmeg
1 lb. filo dough
1 tub of sweet butter for basting

Combine cheeses and eggs, mix well with hands. Add nutmeg. Refrigerate mixture until set. Melt butter into 2 inch pieces covering the rest until needed with a damp towel. Unroll one piece.

Use 2 strips of filo dough for each triangle. Brush with butter. Add 1 full teaspoon of cheese on one end.

Roll like a flag. Brush with butter. If batter becomes loose, refrigerate. Bake for 20 to 30 minutes at 350 degrees until golden brown.
