HAM AND CHEESE QUICHE 
1 tsp. dry mustard
1 tbsp. water
4 eggs, slightly beaten
2 c. milk or light cream
1 1/2 c. grated sharp cheddar cheese
1/4 tsp. salt
1/8 tsp. pepper
2 c. thinly sliced onions
2 tbsp. butter
1/2 c. diced cooked ham
1 unbaked pie shell

Make a paste of mustard and water. Add to eggs, milk, cheese and seasonings. Saute onions in butter until tender, but not brown. Add onions and ham to milk mixture. Pour in pie shell. Bake 15 minutes at 400 degrees, then reduce heat to 325 degrees and bake 20 to 25 minutes or until firm. Serve cut in wedges.
