1/2 c. rice 1 1/2 c. water 1 1/2 tsp. salt 1/2 tsp. pepper 6 tbsp. butter 7 c. yellow onion, thinly sliced or diced 1/4 c. whipping cream 1/4 c. Swiss cheese, grated 3 qt. casserole dish with lid Add 1 teaspoon salt to the water and bring to a boil. Add the rice and boil for 5 minutes. Drain immediately. Melt 4 tablespoons of butter in the 3 quart casserole. Stir in rice, onion and remaining seasonings. Bake at 300 degrees for 1 hour or until rice and onion are very tender. Just before serving, blend in the whipping cream, Swiss cheese and remaining butter. Serves 6. |
