CHICKEN WALNUT BALLS 
1 c. ground walnuts
1/3 c. ground sesame seeds
3/4 lb. boneless chicken breast
1 tsp. ginger root, grated
2 leg scallions
1 egg white
Dash of salt and pepper

Process chicken breast, scallions, until finely chopped. Add grated ginger root. Salt and pepper and beaten egg white. Form into balls. Coat with chopped walnuts and sesame seeds. Deep fry in hot vegetable oil until golden brown, 4-5 minutes. Drain on paper towel. Serve hot pierced with toothpick.
