CHOCOLATE MERINGUE PIE 
FILLING:

3/4 c. sugar
1/3 c. cornstarch
2 squares unsweetened chocolate, sliced
1/2 tsp. vanilla
1/2 tsp. salt
2 1/2 c. milk
3 egg yolks, beaten

MERINGUE:

4 egg whites, room temperature (or 1/2 c.)
1/4 tsp. cream of tartar
1/2 c. sugar

In medium saucepan, combine sugar, cornstarch, chocolate and salt; mix well. Gradually stir in milk and bring to a boil. Boil for 1 minute, stirring constantly. Remove from heat. Stir 1/2 of hot mixture into egg yolks, mixing well. Return to pan. Bring back to boil; stir; boil 1 minute. Remove from heat. Stir in vanilla. Pour immediately into prebaked pie shell. Heat oven to 375 degrees.

MERINGUE: In medium bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar. Beat until stiff peaks form. Pour on pie and bake 5 minutes or until golden.
