DAD'S FAVORITE LEMON MERINGUE
PIE
 
4 egg yolks
6 tbsp. lemon juice
1 c. sugar
3 tbsp. flour
1 1/2 c. milk

MERINGUE:

1/4 tsp. cream of tartar
4 egg whites
8 tbsp. sugar

Mix together in top of double boiler, egg yolks, lemon juice, sugar and flour. Add milk, beating vigorously. Set over hot water and cook until cream thickens.

MERINGUE: Beat egg whites on high speed until stiff. Add cream of tartar. Add sugar, one tablespoon at a time. Beat until peaks form. Put cream in precooked pie shell and top with meringue. Bake at 400 degrees for 8 to 10 minutes.
