HAWAIIAN FRIED CHICKEN 
1 chicken, cut into serving pieces
1/2 c. flour
1 tsp. salt
1 tsp. ginger
1/4 tsp. pepper
1/4 c. butter
1 (8 3/4 oz.) can crushed pineapple, undrained
2 tsp. soy sauce
1/2 c. water

In a small paper bag, combine flour, salt, ginger and pepper. Shake chicken in bag, a few pieces at a time, coating well. Heat butter in a large frying pan. Add half the chicken pieces and brown well on all sides, set aside. Brown remaining 1/2 of the chicken pieces. Place all the chicken pieces in the pan. In small bowl, combine pineapple, soy sauce and water. Pour over chicken. Cover; simmer for 30 to 40 minutes. Serve with white rice.
