CHILI CON TURKEY 
2 tbsp. vegetable oil
1 c. chopped onion
1 c. chopped celery
1 clove garlic
1 1/4 lbs. ground turkey
2 (15 oz.) cans tomato sauce
2 (15 oz.) cans tomatoes
2 tsp. chili powder
1 (15 oz.) can kidney beans

Heat oil over low heat and saute onion, celery and garlic until onion is golden. Add turkey, raise heat to medium, and saute until no longer pink. Add remaining ingredients. Bring to a boil, then reduce heat to low. Cover and simmer 50 minutes. Remove garlic before serving. Serve topped with minced onion and shredded Cheddar cheese. Serves 4-6.
