OATMEAL PANCAKES 
3/4 c. regular or quick cooking oats, uncooked
1 1/2 c. milk
2 eggs, beaten
1/4 c. melted shortening or Wesson oil
1 1/4 c. flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt

Combine oats, milk, eggs and Wesson oil; set aside for 5 minutes. Mix thoroughly with a whisk.

Add dry ingredients to oat mixture and stir just until blended. Mixture will be thick. Pour about 1/4 cup batter on hot griddle for each pancake. Serves 4 to 5 people.
