IRON SKILLET PINEAPPLE UPSIDE
DOWN CAKE
 
1 c. butter
1 c. sugar
2 eggs, beaten separately
1 1/2 c. flour
1/2 c. milk
2 tsp. baking powder
1 c. brown sugar, packed
1 med. can sliced pineapple
Maraschino cherries

Melt 1/2 cup butter and brown sugar in bottom of 9 inch iron skillet. Lay pineapple slices (as many as possible) on top of this. Lay cherry in center of pineapple slice. Cook gently about 10 minutes. Mix remaining ingredients and pour cake mixture over pineapple. Cook on top of stove 1 minute, then in oven 40 minutes at 375 degrees. A very rich cake.
