CAJUN PORK 
2 lb. boneless pork loin roast
Cooking oil
3 tbsp. paprika
1/2 tsp. red pepper (cayenne)
1/2 tsp. white pepper (ground)
1 tbsp. garlic powder
2 tsp. oregano
2 tsp. thyme
1/2 tsp. salt
1/2 tsp. cumin (ground)

Rub surface of loin lightly with oil. Combine seasonings as mixture and rub well over all surface of roast. Place roast in foil, fold tight and put in shallow pan. Bake for 1 hour at 350 degrees. Remove from oven and let stand 5-10 minutes before cutting.
