OKRA MEDLEY 
1 lb. frozen cut okra
1 med. potato, cut shoestring & halved
1 med. onion, thinly sliced
2 to 3 tbsp. butter
1/4 c. yellow cornmeal
1/4 c. hazel nuts or pecans
3/4 tsp. basil
Salt & pepper to taste
Water to nearly cover

Simmer okra, potato, onion, butter and cover with 1/4 cup cornmeal and lid for 5 minutes. Carefully turn mixture over so cornmeal is on bottom. If too dry, add water. Add nuts, salt and pepper and basil. Sprinkle with cornmeal. Cover, simmer until cornmeal on bottom is crusty. To serve, put in bowl with crusty side up.
