BAKED GERMAN POTATO SALAD 
An old German recipe that's been handed down many generations.

1 c. diced bacon
1 c. slivered celery
1 c. chopped onions
3 tsp. salt
3 tbsp. all-purpose flour
2/3 c. vinegar
2/3 c. sugar
1/2 tsp. pepper
1 1/3 c. water
8 c. sliced, cooked potatoes

Fry bacon; drain. Return 4 tablespoons bacon grease to skillet. Add celery, onions, salt and flour. Cook gently. Add vinegar, sugar, pepper and water. Bring to boil. Place potatoes and bacon in 3-quart baking dish. Pour hot mixture over potatoes and bacon. Mix gently. Sprinkle a few pieces of fried bacon, crushed, over the top. Cover and bake at 350°F for 30 minutes.

Serves 12.
