CHINESE BARBECUED CHICKEN WINGS
3 lbs. chicken wings, tip cut off
1/3 c. soy sauce
3 tbsp. sugar
3 tbsp. brown sugar
3 tbsp. vinegar
1 tsp. ground ginger
2 pods crushed garlic
1/2 c. strong chicken broth
Accent
Fresh ground pepper

Marinate the wings in the other ingredients, well mixed, for about 2 hours. Turning if necessary so that all pieces are covered. Bake 350 degrees on a rack, uncovered, in shallow pan for an hour or a little longer. Turn once and baste 2 or 3 times with the marinade. If you have a baster, keep the marinade in the bottom of the pan and baste from there.

The whole disjointed chicken may be cooked this way, too, and of course cubes beef and pork on skewers. Good for a main course as well.
